Responsibilities include :
Directing food preparation and service for all meal periods
Recipe adherence and daily specials creation with an emphasis on Italian cuisine
Training and supervising kitchen staff
Compliance with food and facility safety / sanitary requirements
Ensuring food quality and cost standards are consistently met
Completing kitchen administrative and human resource duties
Inventory, ordering, scheduling within cost control budget guidelines
5 years prior experience as Chef / Assistant Chef is required
All Cost Controls relating to food production
Extensive knowledge of Food Safety Programs / HACCP / and Health Department compliance.
Prior experience as Head Chef, Sous Chef, Executive Chef, Chef de Cuisine, Kitchen Director, BOH Director is critical to success at this job.
